Every year I make fudge and peanut brittle. The fudge is good, but the peanut brittle is wonderful. It's the best I've ever tasted, if I may modestly say so.
Monday, Cleo and I went to Judy's to make candy and a few other things. We weren't entirely successful as we ran out of time. Judy and I learned that the butter used in the fudge needs to be entirely room temperature. If not, the butter oozes out of the chocolate mass as an oily substance. yuck! It can be saved by reheating and stirring really vigorously over the heat. However, the fudge will be a little grainy.
The kids will enjoy it.
You can find the recipes here.
We also made the buttery cookies I bake each year using my food processor. It has little bits of chocolate and pecan and melts in one's mouth. We formed the dough into two logs, wrapped them with waxed paper, and left them in Judy's refrigerator. She'll have it available to bake at a moment's notice...unless a mouse gets into the dough and nibbles!
Cleo made an almond roca type candy. It was very good! We'll be making more of it to give to friends. Earlier we had baked chocolate/vanilla spiral cookies. These are also refrigerator cookies. I put them into the freezer to save, but they seem to be disappearing. Methinks I must have mice, also. And the coconut cherry cookies we baked were quite good.
It's fun to do these things at Christmas, especially with friends in the kitchen.
